INGREDIENTS
- 28oz. thinly sliced sirloin steaks
- 1 Cup bell pepper, julienned
- 1 Cup red onion, julienned
- 1 Cup zucchini, julienned
- 1 Cup baby asparagus, sliced lengthwise
- 2 tsp. Garlic, minced
- 10 Sprays Pam
- 1/4 tsp. Sea Salt
- 1/2 tsp. Freshly ground black pepper
- Toothpicks
DIRECTIONS
Preparation Heat olive oil in a skillet over medium heat. Add the garlic and cook 1 to 2 minutes or until fragrant. Add all of the thinly sliced vegetables, season to taste and cook until softened, 4 to 5 minutes. Preheat grill to medium-high heat. Place some of the vegetables in the center of each slice of beef. Tightly roll the meat around the filling, and secure with a toothpick. Season each beef roll to taste with sea salt and freshly ground black pepper. Grill the beef rolls, 2 to 3 minutes per side.
